Is there any date on the US calendar that causes more excitement than Thanksgiving? Probably not, but it’s not without it’s angst too. Post-op WLS patients either know from years gone by that it can be the start of a holiday regain (and thereby dread it or vow to make this year different); and newbies flail around wondering what they can and can’t have and look a tad despondent.

Well here at Bariatric Cookery we don’t feel you should feel dejected or depressed over such a celebratory meal. In the past we have covered the Main Event; some tips for making it the best ever get together; and provided some great recipes that can become new family favourites.

BUT FOR SOMETHING NEW:

 

Here’s a great side dish that is made with Brussels sprouts, carrots, dried unsweetened cranberries, nuts and balsamic glaze. It’s deceptively simple to make but tastes far more complex and perfect for holiday eating. If you don’t want to use mixed nuts then opt for pecans or walnuts instead, and do consider sprinkling with a little grated Parmesan cheese before serving, especially if serving warm. It does however taste pretty irresistible cold too.

BALSAMIC GLAZED BRUSSELS SPROUTS & CARROTS

Ingredients

METRIC/US

350 g/12 oz Brussels sprouts, trimmed

350 g/12 oz carrots, peeled

low-fat cooking spray or mist

salt and freshly ground black pepper

40 g/1½ oz coarsely chopped mixed nuts (I used walnuts, pecans, hazelnuts, almonds and cashews)

25 g/¼ cup dried unsweetened cranberries, soaked in a little warm water to plump

1 tbsp balsamic glaze (I used Waitrose Cook’s Ingredient) or thick balsamic vinegar

1-2 tbsp grated Parmesan cheese (optional)

 

Method

  1.  Preheat the oven to 220 C/425 F/gas 7. Halve the sprouts lengthwise if large or leave whole if small. Cut the carrots into bite-sized pieces.
  2.  Place on a baking tray lined with Easy Glide or parchment paper and spritz generously with low-fat cooking spray or mist. Season with salt and pepper.
  3.  Roast in the oven for 15 minutes, toss or turn to cook and brown evenly, and cook for a further 5-8 minutes until tender and golden.
  4.  Add the nuts and cook for a further 3 minutes to toast and crisp slightly.
  5.  Transfer the sprouts, carrots and nuts to a serving bowl, add the drained cranberries and toss to mix. Season to taste and drizzle with the balsamic glaze. If liked sprinkle with grated Parmesan cheese and toss before serving.
  6.  Serve warm or cold (the mixture will keep for 2-3 days if chilled and can be reheated gently to serve warm if liked).

 

SERVES 4

I think we all need a recipe in our files or ‘arsenal’ as I often call it for mid-week, but especially Monday evening eating. Something that you can have on the table in under 30 minutes and uses what you have in the refrigerator, larder and store cupboard – so no special trip to the shops!

 

This is an easy peasy recipe that now goes into our Super Simple archive. It makes full use of the microwave to speed things up but you can go the slower route if you prefer to cook the sweet potatoes in the ordinary oven. This is a vegetarian feast where the potato shells (if you can tolerate them) become wonderfully crisp for the bean and cheese filling. The recipe is essentially a green (food for life) one but those on the soft stage may well be happy to eat just the filling mixture (without the spring onions/scallions) out of the skins. The beans and potatoes can be mashed together with the cheese to get the right consistency.

 

I have used taco flavoured beans below but there are a whole host of other bean mixes that you can consider – chilli and Provencal are two other favourites.

 

To serve, simply add salad – I often rely upon a mixed bag on particularly busy nights after a heavy working day.

 

LOADED TACO BEAN SWEET POTATOES

Ingredients

METRIC/US

4 x 200 g/7 oz sweet potatoes, scrubbed

396 g/14 oz can taco mixed beans in spicy tomato sauce (or your favourite bean mix)

4 spring onions/scallions, chopped

salt and freshly ground black pepper

75 g/¾ cup low-fat grated hard cheese

 

Method

  1.  Preheat the oven to 220 C/425 F/gas 7. Prick the potatoes with a fork several times and place on a microwave-proof plate. Microwave on FULL POWER for 8 minutes, halve and set aside to cool for 5 minutes. Alternatively, if you don’t have a microwave, bake the sweet potatoes at 200 C/400 F/gas 6 for 50  minutes.
  2.  Scoop the flesh out of the potato halves, setting the skins aside. Cut the flesh into cubes and place in a bowl. Stir in the beans, half the spring onions/scallions and salt and pepper to taste.
  3.  Put the skins in a roasting tin/pan and divide the bean mixture between them. Top with the remaining spring onions/scallions and the cheese. Bake in the oven for 10 minutes until the skins are crisp and the cheese is melted.
  4.  Serve hot with salad if liked.

I don’t often often feature energy type snacks because I get most of the energy I need from my regular 3 meal a day regime, but many of you often request at meetings the names of commercially made balls, bars and snacks that you can nibble on when energy dips or you’re on the move. 

Bariatric-Friendly Choices:

To be frank there aren’t that many I would recommend since they are either full of sugar (or polyols), have little protein, or taste really quite nasty and chalky. There are the one or two exceptions but not generally available in stores – you have to order on the web (and the shipping price can bump up the price appreciably).

 

I therefore tend to make my own whenever the need or urge comes along – that way I know what’s in them and I can tailor to my own taste. This one, for example, has an optional scoop of protein powder (choose a bariatric-friendly one) and I like to sometimes use a vanilla flavour, often a complementary cinnamon one, and at this time of year love a pumpkin or pumpkin spice one. My fave of the moment is Pumpkin and Chia Seed. Of course you can just add unflavoured or omit altogether – as I said your choice.

 

This recipe makes 12 regular-sized balls but bariatrics can roll into smaller half-sized ones if they prefer.

 

 

PINK LADY APPLE & OAT PROTEIN ENERGY BITES

Ingredients

METTRIC/US

140 g/1½ cups rolled oats

I x 50 g scoop protein powder of your choice ( OPTIONAL – I used Pumpkin and Chia Seed Protein Power from That Protein, details here) – your scoop size may differ

1 medium grated apple (I used Pink Lady)

120 g/½ cup unsweetened crunchy almond or other nut butter

50 g/generous ½ cup unsweetened desiccated/shredded coconut (plus extra for coating if liked)

5 tbsp sugar-free and no calorie syrup or honey (I used a Starbucks sugar-free syrup but sometime use agave nectar, Sweet Freedom or Da Vinci syrups)

1 tsp ground cinnamon

 

Method

  1.  Mix the oats with the protein powder, if used, apple, nut butter, coconut, syrup and ground cinnamon in a food processor until fully combined. If using protein powder then a little extra syrup may be required depending upon the juiciness of the apple.
  2.  Divide and shape the mixture into about 12 balls (each about 2 tbsp of the mixture) then roll in extra coconut if liked. Place on a plate and chill for at least 2 hours before serving.
  3.  Store in an airtight container in the refrigerator for up to 5 days.

 

MAKES 12

A Festive Slaw For Thanksgiving or Christmas

 

I have been rolling up my sleeves, patting down my apron, wielding the knives and getting my thinking cap on these last few days – all in the interests of coming up with some new FESTIVE sides for the coming weeks ahead – when Thanksgiving and Christmas loom, along with other celebratory events on the calendar.

 

I don’t often mess with the main event family favourites – everyone loves their own family take on things more than someone else’s, but occasionally I do think we can tinker with a side dish to make it a little more bariatric-friendly. Slaw is one side dish that I think is long overdue for a re-vamp. I’m a little tired (maybe after the summer) of the usual white cabbage, carrot and mayo version, but know it’s a staple of the buffet table.

 

So I present you today with a new seasonal variation which I think is something of a triumph. It has crunch (a must), has seasonal ingredients (a bonus), keeps well (very favourable), and now weighs in lighter than any original version (my gift to you). This does away with the slow – slaw! (or quick) dance around the buffet table while deciding if you can have one spoonful or two.

 

It’s made using in-season red onions, red apples, nuts, pomegranate seeds, red cabbage and dried cranberries. The mystery ingredient is shredded Brussels sprouts instead of shredded white cabbage – only a few – but trust me they work marvellously and don’t overwhelm the mixture. The slaw is then tossed in an apple cider vinaigrette with just a hint of wholegrain mustard. It’s a winning combination.

 

It keeps amazingly well and dare I say even improves with a little standing. If you’re making a few days in advance (and why not?) then keep the apples and nuts separate to add on the day of serving so that their colour and texture stay fresh.

 

Festive Slaw with Smoked Salmon and Egg Mayo on

Bariatric Portion Plate with Bariatric Cutlery

 

FESTIVE SLAW

Ingredients

METRIC/US

about 12 Brussels sprouts (about 150 g/5 oz), shredded

1 medium carrot, peeled and grated

75 g/3 oz (small wedge) red cabbage, finely sliced

½ small red onion, finely sliced

25 g/¼ cup unsweetened dried cranberries

25 g/¼ cup pecans or walnuts, sliced

1 red apple, cored and thinly sliced

1 tbsp lemon juice

few pomegranate seeds and/or redcurrants

Dressing:

2 tbsp apple cider vinegar

1 tbsp sugar-free syrup or agave nectar (I used Sweet Freedom)

1 tsp wholegrain mustard

3 tbsp olive oil

salt and freshly ground black pepper

 

Method

  1.  In a large bowl, mix the Brussels sprouts with carrot, red cabbage, red onion, dried cranberries and pecans or walnuts.
  2.  Mix the apple with the lemon juice and add to the slaw mix with the pomegranate seeds and/or redcurrants.
  3.  To make the dressing, mix the cider vinegar with the syrup and mustard. Whisk in the oil to make a vinaigrette and season to taste with salt and pepper.
  4.  Add the dressing to the slaw and toss well to coat. Cover and chill until ready to serve. Refrigerated this way the slaw will keep for up to 5 days (see tip in intro).

Make Bonfire Night food something of a sparkler or bang on!

 

We’re having a simple but spicy Gunpowder Chicken dish to make it a night to remember … We’ll make a large tray and hand around or let everyone help themselves. Starting prep the day or a few hours before, because the meat tastes better if left to infuse in the marinade.

 

Gunpowder is a spicy mix (that originates from China) and offers a wonderful punch of sweet, sour and chilli hits. I like to serve with a cooling salad of avocado, black beans and tomatoes but a more authentic one might include beansprouts, spring onions/scallions, coriander/cilantro and peanuts. Your call …

 

You can serve it with noodles of course (or rice) or serve in a lettuce wrap or cup if you’re watching the carbs.

 

 

GUNPOWDER CHICKEN

Ingredients

METRIC/US

12 large skinless and boneless chicken thighs

Marinade:

3 tbsp dark soy sauce

1 tbsp sweet chilli sauce

1 tbsp lazy garlic or crushed garlic

2 tbsp lazy grated ginger

Glaze: 

3 tbsp low sugar tomato ketchup

3 tbsp sugar-free syrup (I used Sweet Freedom), or use honey or maple syrup if preferred

1-2 tsp chopped red chillies

2 tbsp sriracha sauce

3 tbsp rice wine or white wine

lime wedges to serve

 

Method

  1.  Halve the chicken thighs length ways or cut into large pieces and place in a bowl. Mix the soy sauce with the chilli sauce, garlic and ginger, pour over the chicken and toss to coat. Cover and chill for at least 4 hours or overnight in the refrigerator.
  2.  Preheat the oven to 200 C/400 F/gas 6. Spread the chicken (with it’s marinade) on a baking tray and cook for 20 minutes or until the chicken begins to brown. Reduce the oven temperature to 180 C/350 F/gas 4.
  3.  To make the glaze, mix the ketchup with the syrup, chillies, sriracha sauce and wine. Remove the chicken from the oven and pour over the glaze to coat the chicken evenly. Return to the oven and cook for a further 15-20 minutes (or less if the chicken thighs are thin) until the chicken is cooked, browned and sticky. 
  4. Serve hot, warm or cold with lime wedges to squeeze over – an essential I think!

Use Bariatric-Friendly Chicken

Use boneless chicken thighs for this recipe – they are more flavoursome than chicken breasts and cook to a more tender result – easier on the pouch and are less likely to dry out.

 

Use Up Leftovers in a Bariatric-Friendly Way

Make plenty because it’s simply gorgeous in a lettuce wrap for hand holding and eating and a great way to use any leftovers in a bariatric bento box. It’s even very good served cold – we have kept the odd portion back for a speedy bariatric lunch on our bariatric portion plate.

Now that the ghosts and ghoulies have gone to bed, and the mercury has dropped here like a lead balloon, here’s a lovely way to use up some of the inevitable discarded pumpkin from Hallow’een,  in a soothing and restorative way – as a pumpkin and coffee latte drink, delicately flavoured for warming comfort. 

 

I know that some surgical groups advise that you steer clear of coffee after WLS surgery and some don’t. Some say if you do have then use decaffeinated coffee. Some simply recommend as a treat or ‘so many per week’ – always heed their advice to you. I am fortunate in that my team do not have hard and fast rules on this and some 9 years out of surgery have been given the green light for this occasional treat.

 

The recipe should make about 3-4 lattes depending upon the size of your cups or mugs, but any pumpkin mixture can be stored in the refrigerator in an airtight container, but do reheat before adding your coffee. I used Nespresso coffee capsules (each making about 40 ml coffee) to top up the warm pumpkin mixture, then sprinkled with cinnamon before serving. Adjust if your coffee capsules makes a different quantity. I have used half-fat coconut milk but you can use full-fat if you prefer or a different formulation. 

 

I won’t pretend that as a basic recipe this has a great deal of protein in it but you can add some unflavoured or flavoured protein powder to the pumpkin milk if liked. I have tried with unflavoured but also with Pumpkin and Chia Seed Protein Power from That Protein, details here  and it was delicious (I generally use it in a shake and also in porridge/oats) and it really boosted the protein content appreciably.

 

PUMPKIN SPICED LATTE

Ingredients

METRIC/US

125 ml/½ cup unsweetened pumpkin puree (canned if fresh not available)

250 ml/1 cup half-fat coconut milk

1 tbsp agave nectar or sugar-free syrup

1/2 tsp vanilla extract

4 coffee capsules or pods (I used 4 Diavolitto Nespresso ones)

ground cinnamon to sprinkle

 

Method

  1.  Mix the pumpkin with the coconut milk and agave syrup in a pan over a medium heat. Whisk well to combine and heat for about 5 minutes.
  2.  Remove from the heat, stir in the vanilla and set aside until ready to use.
  3.  To make, fill each serving glass or mug two-thirds of the way up with the warm pumpkin milk mixture. Insert a coffee capsule and brew your coffee in the usual way to top up the cup. 
  4.  Sprinkle with cinnamon to serve.

DON’T THROW AWAY YOUR PUMPKIN!  This jewel of a golden globe can cast a sweet spell and make a magical soup – perfect for Hallow’een or post trick or treat eating. 

Used in this soup recipe it provides a warming, almost devilled, lift to an autumnal veggie and wls favourite. It makes 6 good sized non-wls portions, so ideal for crowd feeding but also freezes beautifully too. A favourite of mine to conquer the cold in the autumn and winter months!

 

Bariatric-Friendly Base

The soup, made with your pumpkin will have lots of great nourishment but when mixed with tomatoes, onions, celery and red lentils the nutritional profile and protein stats will increase. If you’re short on the pumpkin or butternut squash required then add extra chopped carrot to replace the deficit and benefit from the sweetness they bring. Needless to say, if you wish to boost the protein further then add some unflavoured protein powder after cooking (while warm but not very hot so that it mixes in beautifully).

 

Bariatric-Friendly Toppings

If you’re every early post-op then maybe you’ll just take your soup plain and blended very smoothly or with a swirl of yogurt at most. But later you can add chopped herbs, a scattering of sliced chillis (I used some sliced stuffed ones), a sprinkling of toasted seeds, a little crumbled or grated cheese, a low-fat crisp or better still (for protein) a Parmesan crisp (see how to make here).

 

Bariatric-Friendly Sides

This is a hearty soup so it’s very filling but those who are wls veterans (that would be me then!) and non-wls eaters might like some bread on the side. I think my protein bread (see how to make here) is wonderful and moreover nutritious (as well as being bariatric-friendly).

DEVILLED BUT DELICIOUS PUMPKIN SOUP

Ingredients

METRIC/US

low-fat cooking spray or mist

2 red onions, chopped

1 celery heart, trimmed and chopped

1 tsp chopped red chilli (I used Lazy Chilli)

2 cloves garlic, crushed

800 g/1¾ lb pumpkin or butternut squash, peeled, seeded and coarsely chopped

200 g/½ lb carrots, peeled and chopped

1½ tsp garam masala

275 g/10 oz small cherry tomatoes (I used red and yellow), halved

150 g/¾ cup red lentils

1 litre/4¼ cups hot water or light vegetable stock/bouillon

salt and freshly ground black pepper

 

Method

  1.  Generously spritz a very large pan with low-fat cooking spray or mist. Heat, add the onions, celery and chilli and cook for 8-10 minutes until softened and lightly browned, stirring occasionally. Add the garlic and cook for a further 1 minute.
  2.  Add the pumpkin or squash and carrots and cook for 2 minutes.
  3.  Stir in the garam masala and cook for 1 minute then add the tomatoes, lentils, water or stock and salt and pepper to taste, mixing well. Bring to the boil, cover and simmer for about 40 minutes until the vegetables are very tender.
  4.  Blitz the soup, in batches until smooth (or retain a little texture if you prefer your soup that way), return to the pan and reheat gently to serve. 
  5.  Serve topped with any of the suggestions in the intro above if liked.
